French salad
Introduction

This french salad is a tasty way to help you get your 5 A DAY.
In France it is called a 'salade nicoise' because it comes from a part of France called Nice.

Ingredients

To make enough salad for 4 people you will need:
- 450g baby new potatoes
- 2 eggs
- 115g French beans
- 6 medium-sized tomatoes
- lettuce leaves
- 50g black olives (without stones)
- 400g can tuna, drained
- 250g can anchovies (optional)
- 400g can artichoke hearts (optional)
- French bread (optional)
Equipment

Ask an adult to help you find and use these kitchen tools:
- saucepan
- bowls
- chopping board
- small sharp knife
- colander
- can opener
- garlic crusher
- whisk
- spoons
Remember to wash your hands before you begin.

Wash the potatoes.
Put them in a saucepan and cover them with cold water.
Ask an adult to boil them for 15 minutes.

Now ask an adult to help you rinse the cooked potatoes and eggs in cold water to cool them down.
After you have done this leave them to one side in a bowl.

Ask an adult to help you chop up the cooked French beans, the tomatoes and the artichoke hearts (if you are using them).
Dressing

You can make a yummy salad dressing to pour over your salad.
You'll need to whisk together:
- 3 tablespoons olive oil
- 1 dessertspoon balsamic vinegar
- 1 clove garlic, crushed
- 1/2 teaspoon French mustard
- black pepper

Wash the lettuce and shake off the water.
Put the lettuce leaves in the bottom of a large salad bowl.

Add the chopped vegetables and olives to the bowl.
Take the shell off the eggs and chop them up. Add the eggs to the bowl too.
You can now pour on your salad dressing.

Drain the tuna using the colander. Then use a fork to break it up a bit.
Chop the anchovies (if you are using them) and add all the fish to your salad.

Make a French flag from a small piece of card. Glue or tape a cocktail stick to the back of it. Use it to decorate a chunk of French bread.
